Acai Bowl
I remember the first time I ever had an acai bowl on Oahu’s north shore. It opened my mind to the deliciousness of a fairly simple blend of ingredients. When I eat acai bowls, I am also reminded of all the fun after school memories in high school, trying out different bowls after school with friends. My favorite juice shop closed down due to the pandemic leaving me devastated! So I sought out to make the perfect bowl myself. The balance of the earthiness of the acai, pop of flavor from the berries, combined with the creaminess of coconut milk is the perfect smoothie bowl for any time of the day. An acai bowl is something I never get tired of, even if I have one almost every day!
Serves: 2
Ingredients:
1/2 cup coconut milk
1.5 cups frozen strawberries
2 cups frozen mango
1 TB honey optional, I usually omit
1 packet of unsweetened acai Sambazon or Pitaya Foods Brand
Instructions
1. Let the acai pack thaw for 5 minutes
2.Add coconut milk to blender first and proceed to add frozen strawberries, frozen mango, and broken up acai pack
3. Blend on medium intensity, using a taper to assist blending, stopping to scrape the sides of the blender
*If you do not have a tamper, put all ingredients in the blender and wait 30 minutes for them to slightly thaw, then blend
4. Use a silicone spatula to serve the acai.
5.Top the acai with granola, fresh fruit, and any of your favorite toppings. My personal favorites are blueberries, almond butter and cacao nibs!

*Note: I recommend waiting 30 minutes before blending for quicker and easier blending. This is a great trick for less powerful blenders. If you are wanting to make acai immediately, use a tamper. If you experience difficulty with blending, even with a tamper, add 3 tbsp more of milk.
